Lemon Curd

I made this several years ago and was very pleased with the results. Despite the fact that it had no preservatives, (a very good thing!) It lasted quite a while in my fridge and was still very flavorful.

Ingredients
- 4 eggs
- 2 C sugar
- 1 C butter, melted (no substitutes)
- 2/3 C lemon juice
- 3 TBS. grated lemon peel
- 1/8 tsp. salt

Preparation
Step 1
In the top of a double broiler, beat eggs and sugar. Stir in butter, lemon juice, peel and salt. Cook over simmering water for 15 min. or until mixture is thickened and reaches 160. Cover and store in refrig. for up to 1 week Serve chilled with scones, biscuits or English muffins. Yields 3 1/2 C.
