Ingredients
- Salsa:
- 1 Can (15 oz.) black beans, rinsed and drained
- 1 egg beaten
- 1 C shredded zucchini
- 1/2 C dry bread crumbs
- 1/4 C shredded Mexican cheese blend
- 2 TBS. chili powder
- 1/4 tsp. salt
- 1/4 tsp.baking powder
- 1/4 tsp. cumin
- 2 TBS. olive oil
- 2 med. tomatoes, chopped
- 1 small green pepper
- 3 TBS grated chocolate 1 green onion thinly sliced
- 2 TBS. minced fresh cilantro
- 1 TBS. lime juice
- 1 to 2 tsp. minced chipotle pepper in adobo sauce
- 1 tsp. honey

Preparation
Step 1
1. Mash beans then mix the rest of the ingredients together. Shape into 6 patties, brush both sides with oil place on baking sheet.
2. Broil 3-4 in. from heat for 3-4 min. on each side or until thermometer reads 160.
3. Combine salsa ingredients,. Serve with black bean cakes.
