Wisconsin Cheddar-Stout Onion Dip

Ingredients
- 2 large yellow onions sliced
- 1 T butter
- 1 8 oz. package of extra sharp white cheddar cheese
- 1 c ricotta cheese
- 1/4 c stout beer
- 2 tsp. Dijon mustard

Step 1
In microwave safe bowl, cover and microwave onions about 10 minutes stirring once. In skillet cook onions in butter for 10 minutes stirring occasionally. Let cool slightly. In processor or blender, puree cheeses, beer, mustard and onions 1 minute or until smooth. Season with salt and pepper. Serve with pita wedges.
