  • Instant potatoes
  • Hot water
  • 2 bunches (or more) chopped green onions,
  • including tops
  • margarine
  • shredded cheddar cheese
  • sour cream
  • salt and pepper

Preparation

Step 1

Mix hot water with instant potatoes. Don't make it sloppy; it should be stiff. Add enough
sour cream to make it feel like mashed potatoes - not runy. Add some of the cheddar cheese
- don't be stingy. Add the green onion/margarine mixture to potato mixture plus salt and
pepper and mix well. Taste for salt. Put in casserole and top with more cheddar cheese.
Bake at 350 until done - about 30 minutes.
