French Onion Soup Quiche
- 1 unbaked pie crust
- 1 small onion, half finely chopped and the other half thinly sliced (1 cup)
- 3 Tbls. butter
- 2 level Tbls. of onion soup mix
- 1/4 cup of water
- 1 cup of half and half
- 4 large eggs
- 1 cup shredded Swiss cheese
- 1/2 cup shredded mozzarella
- Grated parm. (optional)
Melt butter in medium skillet. Add onion, carmelizing over low heat, about 15 minutes.
Meanwhile boil 1/4 cup of water, add onion soup mix. Let cool
Whisk eggs until slightly beaten, adding half and half.
Mix egg mixture and soup together. Add Swiss and mozz cheese, then stir in caramelized onions.Pour mixture into unbaked pie crust. Bake at 375 for 15 minutes. Sprinkle lightly with parm and return to oven with temp.lowered to
350 for an additional 30 to 40 minutes or until knife can be inserted in the center abd come out clean.
