Baked Chicken and Spinach Quesidellas

Ingredients
- 1 lb chicken thighs
- 16 oz beer
- 2 C water
- 1 t paprika
- 1 t salt
- 1 t garlic powder
- 1 t cumin
- 1 t chili powder
- 1 jalenpano pepper
- 3 C baby spinach
- 5 tortillas
- 6 oz shredded cheese
- 1 T olive oil
- salsa

Preparation
Step 1
put chicken in deep saute pan and cover w/ beer and water. Boil and simmer til done. Remove and shred into bowl. Mix chicken and seasonings, set aside.
Pour out all but 1/4 C liquid from pan. Add jalepano and spinach and cook on low 2-3 mins til spinach is wilted.
spoon chicken on 1/2 tortilla, top w/ spinach and top w/ cheese; roll and bake on baking pan sprayed w/ Pam. Brush w/ oil before baking.
