- 1 pound boneless skinless chicken breasts, lightly pounded
- Kosher salt, to taste
- Black pepper, to taste
- 1 cup wild rice blend
- 10 cloves garlic, crushed
- 1/2 cup sun-dried tomatoes,* packed in oil or dried
- 1/2 cup capers, drained
- 2 cups water
- 1/2 cup fresh-squeezed lemon juice
- 1/4 cup extra-virgin olive oil

Directions
Season chicken with salt and pepper. Place chicken in CROCK-POT® slow cooker. Add rice, garlic, tomatoes and capers; stir well.
Mix water, lemon juice and oil in small mixing bowl. Pour mixture over rice and chicken. Stir once to coat chicken. Cover; cook on LOW 8 hours.
*Ingredient Tip
If using dry sun-dried tomatoes, soak in boiling water to soften before chopping.
