- 3 tablespoons butter
- 1 cup onion, chopped
- 1 can (20-ounce) rotell
- 1 can (14.5-ounce) stewed tomatoes, chopped
- 2 pounds velvetta
- 1 pound cheddar cheese, sharp
- Tortilla chips for serving
Preparation time 5mins
Cooking time 15mins
Heat butter in large saucepan and lightly saute onion until soft. Add both cans of tomatoes and simmer until thickened.
Add cheese to the tomato mix and stir, over med heat, until cheese is melted and smooth. serve with the chips
