Seared Tuna with Tropical Salsa

Ingredients
- 8 oz fresh tuna
- 1 tbsp olive oil
- Salt and Pepper, TT
- 3/4 cup finely diced fresh pineapple
- 4 green onions, thinly sliced
- 1/2 tbsp fresh lime juice
- 1/2 tbsp soy sauce
- 1 tsp minced ginger
- 1 small ripe avocado, finely diced
- 1/2 cup coarsely chopped fresh cilantro

Preparation
Step 1
• Cut the tuna in long longs 1-1.5” thick
• Coat the tuna with oil and season lightly with salt and pepper
• Set a heavy 10” skillet over high heat
• When the pan is very hot, sear the tuna 20 seconds a side
• Transfer to a clean cutting board and slice ¼ thick
• In a medium bowl, combine the pineapple, green onions, lime juice, soy sauce and ginger.
• Add the avocado and gently stir to combine
• Stir in the chopped cilantro
• To assemble, set the tuna atop a crustini top with salsa, garnish with cilantro leaf
