- 3/4 C BUTTER
- 1 1/2 C SUGAR
- 1/2 t EACH VANILLA AND COCONUT EXTRACT
- 3 EGGS
- 1 3/4 C FLOUR
- 1/2 C HI MAIZE FIBER FLOUR
- 1 t BAKING POWDER
- 1/2 C HEAVY CREAM
- 1/2 C EACH DICED MANGOES AND SHREDDED COCONUT

Step 1
HEAT OVEN TO 325*. WITH MIXER ON MEDIUM SPEED, BEAT FIRST 4 INGREDIENTS 3 MINUTES. BEAT IN EGGS. IN SEPARATE BOWL, COMBINE NEXT 3 INGREDIENTS. WITH MIXER ON LOW, ALTERNATELY ADD FLOUR AND CREAM. BEAT 30 SECONDS. ADD MANGOES AND COCONUT, POUR INTO GREADED AND FLOURED 9X13" PAN. BAKE FOR 1 HOUR. LET COOL IN PAN 30 MINUTES.
