Roasted Potatoes

The unhealthy, yummy way to roast potatoes. Great with a roast!
Tips:
1) Russets, like an Idaho, work perfect.
2) If eating potatoes with a roast cook them in the fat around the meat as it cooks to add flavor to potatoes.

Ingredients
- 2 lbs baking potatoes
- Duck fat (cover bottom of pan to depth of 1/2")
- Salt & pepper (to taste)

Preparation
Step 1
Preheat oven to 425 degrees.
Peel potatoes and cut into evenly sized pieces, halved or quartered depending on size. Place duck fat in roasting pan and put in over while it heats up. When oil starts to smoke, add potatoes in a single layer and toss around in the hot oil. Toss potatoes every 15 minutes. After 45-60 minutes or until golden. Drain on paper towels, sprinkle with salt & pepper. Serve while hot.
