Festive Pork Roast

Ingredients

  • 2 pound boneless pork loin roast
  • 2 large cloves garlic, pressed
  • 3/4 cup Dole Golden Raisins
  • 1 sprig fresh rosemary (4" long)
  • 1 3/4 cups Dole Canned Pineapple Juice
  • 3 tablespoons currant jelly
  • 1 tablespoon minced, crystallized ginger
  • 1 tablespoon cornstarch
  • Dole Sliced Pineapple for garnish

Step 1

Cut a slit lengthwise through center of pork, not all the way through. Lay flat. Rub with garlic, salt and pepper to taste; sprinkle with raisins. Close roast and tie with string. Place rosemary on top. Wrap roast with heavy duty foil. Poke several small holes through foil into pork on all sides. Place in roasting pan. Roast in 350 degree oven 1-1 1/4 hours.

For sauce - Combine remaining ingredients. Cook, stirring until sauce boils and thickens. Remove foil from roast. Return roast and juices to pan and cover with sauce. Roast 15 to 20 minutes longer. Garnish with sliced pineapple.
