Baked Mashed Potatoes with Parmesan Cheese and Bread Crumbs

Ingredients
- 1 TBS butter
- 4 lbs russet potatoes peeled cut into 1 inch pieces
- 1 C milk
- 1/2 C (1 stick) butter melted
- 1 1/2 C grated mossarella
- 1 C freshely grated Parmesan
- Salt and pepper to taste
- 2 TBS plain dry bread crumbs

Preparation
Step 1
Preheat oven to 400 degrees. Coat a 13x9x2 baking dish with 1 TBS butter and set aside. Cook the potatoes in a large pot of boiling salted water until they are very tender about 15 mins. Drain, return to pot and msah well. Mix in the milk and melted butter. Mix the mozzarella and 3/4 C Parmessan. Season to taste with salt and pepper. Tranfer the potatoes to the baking dish. Stir the bread crumbs and remaining 1/4 C Parmessan in small bowl to blend. Springle the bread crumb mixture over the mashed potatoes. Receipe can be prepared up to thie boint cover and chill. Bake uncovered until the topping is golden brown about 20 mins
