Ingredients
- 1 cup butter, at room temperature
- 2 cups granulated sugar
- 4 eggs
- 2 cups mashed, very ripe bananas (4 large or 6 medium)
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2/3 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts

Step 1
Preheat oven to 350°F. Spray or butter two 9 x 5-inch loaf pans.
Cream the butter and gradually add the sugar, beating well.
Add the eggs and mashed bananas and blend thoroughly.
Sift together the flour, baking soda, salt, and cinnamon.
Combine the buttermilk and vanilla.
Slowly and alternately fold in the flour mixture and buttermilk mixture, beginning and ending with the dry ingredients and blending well after each addition.
Fold in the nuts.
Divide the batter evenly between the pans and bake for 60-75 minutes, or until the bread springs back when lightly touched in the center.
