Ingredients

  • 3 lbs. potatoes
  • 1 (4 oz) jar chopped pimentos, drained
  • 1/2 cup salad olives
  • 1 bunch green onions, chopped
  • 8 slices Swiss cheese (or a mixture of whatever)
  • 1/2- 3/4 cup mayo
  • salt & pepper to taste

Preparation

Step 1

Cook potato until done; peel and cut in chunks. Add pimentos, olives, green onions, 6 slices cheese and mayo. Season with salt & pepper and place in baking dish. Top with remaining 2 slices cheese and bake at 350 for 30 min.
