Fennel, Feta and Olive Tart

  • 1 small fennel bulb, thinly sliced
  • 1/2 c pitted kalamata olives, halved
  • 1 c crumbled feta (4 oz)
  • 1 T olive oil
  • 1 sheet frozen puff pastry (half of 17.3-oz package), thawed and cut into 4 squares



Step 1

In a bowl, toss the fennel and olives with the olive oil and 1/4 t black pepper. Place the pastry squares on a baking sheet and top with the fennel mixture and feta. Bake at 400 until golden brown and crisp, 22-25 minutes.
