Ingredients
- 2 cartons (32 oz each) vegetable broth
- 1 lb dry lentils
- 1-1/2 c. chopped onion
- 1-1/2 c. chopped baby carrots
- 1 c. chopped celery
- 1/4 c. EVOO
- 2 T. minced garlic
- 2 t. Italian seasoning

Preparation
Step 1
Coat slow cooker with nonstick cooking spray. Add all ingredients to slow cooker and stir to combine. Cook on low for 7-8 hours, or 3-4 hours on high.
