    even sized mushrooms

  • 2

    cloves garlic, crushed

  • 2

    tsp minced parsley

  • 1

    stick (4 oz)butter, softened

  • salt, freshly ground black pepper

  • 1

    tsp lemon juice

  • flour

  • 1

    egg, beaten with a little milk

  • dry white bread crumbs

  • oil for deep frying


Wipe the mushrooms and remove the stems. Add the garlic and parsley to the butter and season wtih salt, black pepper and lemon juice. Turn the mushrooms cap side down and place a dab of butter in the cavity left by the stem. Mix the egg with a pinch of salt. Dip the mushrooms first into flour, then into the egg and milk, and finally into the bread crumbs. Chill for 1 hour. Heat the oil until a piece of bread dropped in will sizzle vigorously. Fry the mushrooms until golden brown, drain on paper towels and sprinkle with salt. Serve immediately.
