Ingredients
- 2 medium carrots - peeled and cut into chunks
- 2 medium celery stalks - cut into chunks
- 1 medium onion - cut into chunks
- 2 medium garlic cloves - minced
- 2 cups dry lentils
- 3 bay leaves
- 1/2 tsp. crushed dried thyme
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 8 cups canned chicken broth
- 4 oz diced Canadian-style bacon

Step 1
Place ingredients into slow cooker in this order: carrots, celery, onion, garlic, lentils, bay leaves, thyme, salt, pepper and broth. Cover slow cooker; cook on low setting for 6 hours. Uncover, stir in bacon and heat for 30 more minutes, remove bay leaves.
