Ingredients

  • 2 medium carrots - peeled and cut into chunks
  • 2 medium celery stalks - cut into chunks
  • 1 medium onion - cut into chunks
  • 2 medium garlic cloves - minced
  • 2 cups dry lentils
  • 3 bay leaves
  • 1/2 tsp. crushed dried thyme
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 8 cups canned chicken broth
  • 4 oz diced Canadian-style bacon

Step 1

Place ingredients into slow cooker in this order: carrots, celery, onion, garlic, lentils, bay leaves, thyme, salt, pepper and broth. Cover slow cooker; cook on low setting for 6 hours. Uncover, stir in bacon and heat for 30 more minutes, remove bay leaves.
