Ingredients
- 1 3/4 sugar (split into 1 1/4 and 1/2)
- 1 T. cornstarch
- 3 c. cut fresh rhubarb
- 1/3 c. water
- 3/4 c. sifted flour
- 1 t. baking powder
- 1/8 t. salt
- 1 T. margarine
- 1/4 c. hot water
- 1 egg
- 1/2 t. vanilla
- 1 c. 40% bran flakes

Preparation
Step 1
Mix together 1 1/4 c. sugar and cornstarch. Combine with rhubarb and 1/3 c. water. Bring quickly to a full rolling boil, stirring constantly. Pour into 10x6x2 baking dish or casserole.
Sift together flour, baking powder and salt.
Add margarine to hot water, stirring until melted.
Beat egg until thick. Add margarine mixture, 1/2 c. sugar and vanilla, beating until well blended.
Crush bran flakes slightly with sifted dry ingredients to egg mixture, stirring lightly until combined. Spread batter over rhubarb.
Bake in 375 oven about 25 min. Serve warm with cream or whipped topping and a dash nutmeg, if desired.
