Ingredients
- 3 T. herb-seasoned bread crumbs
- 1 T. grated parmesan cheese
- l/8 t. garlic powder
- l/8 t. paprika
- l/8 t. pepper
- 2 med. zucchini or 4 or 5 whole okras
- 2 tsp. vegetable oil
- 2 T. water
- vegetable cooking spray

Step 1
Combine breadcrumbs, parmesan cheese, garlic powder, paprika, and pepper in a shallow dish; set aside.
Cut each zucchini or okra lengthwise into 4 pieces; cut each piece in half crosswise. Place zucchini or okra in a zip-top plastic bag; add oil and water. Shake.
Dredge zucchini or okra in breadcrumbs mixture, and place on a baking sheet coated with cooking spray. Bake at 473 degrees for 10 minutes until brown and tender.
