Ingredients
- 1 egg (or 2 egg whites)
- 2 cups 1% low fat cottage cheese
- 3 cups cooked brown rice
- 4 cups fresh spinach, torn, uncooked, well drained
- 2 cups mushrooms, quartered
- 1 medium onion chopped
- 2 Tbsp mozzarella cheese, grated

Preparation
Step 1
1. Preheat oven to 375 F.
2. Beat egg and cottage cheese together.
3. Stir in rice, spinach, mushrooms, and onion until well blended.
4. Pour mixture into 13 X 9 inch baking dish coated wisth spray. Sprinkle with cheese.
5. Bake for 30 mins.
