Ingredients
- pinch of saffron filaments
- 5 tablespoons extra virgin olive oil
- 1 teaspoon sherry vinegar
- 1/2-1 tablespoon orange juice
- finely shredded zest of 1/2 orange
- large pinch ground coriander seed
- 1/2 clove of garlic, finely chopped
- salt and freshly ground black pepper
- caster sugar
- 1 tablespoon fresh parsley or coria
- chopped

Step 1
Place the saffron in a small bowl and 1 tablespoon of hot water for 15 minutes separate bowl, whisk together the oil, and orange juice. Whisk in the soaked (and its liquid), the orange zest, ground and chopped garlic. Season with pepper and a pinch of caster sugar, if Leave to stand for at least an hour to all flavors to develop. Just before using, the fresh parsley or coriander.
