Mango-Habanero Pork Sandwich

Ingredients

  • 1 pound shredded pork (pork butt is best)
  • 1/2 red onion
  • 1 small carrot, diced
  • 1/2 habanero pepper
  • 1/2 cup mango preserves
  • 1 cup ketchup
  • 1/4 cup granulated sugar
  • 4 tablespoons rice wine vinegar
  • Foccacia bread
  • Provolone cheese, slice

Preparation

Step 1

1. Braise the pork slowly in beef stock at 325 degrees for about 3 to 4 hours, until the meat easily pulls apart.
2. For the sauce, saute the onion, carrot and habanero pepper until lightly browned.
3. Add the mango preserves, ketchup, sugar and vinegar.
4. Simmer for 15 minutes, cool and puree in blender.
5. Mix the pork and the sauce, to taste, and heat through on low.
6. Slice the bread as needed, place the hot pork mixture on the bread and cover with sliced provolone.
