Italian sausage ragu with penne pasta for 2

Ingredients
- 4 oz dry penne or ziti pasta
- 8 oz sausage
- 1/2 cup diced onion
- 2 tsp tomato paste
- 1/2 cup dry white wine
- 1 can diced tomatoes in juice (14.5 oz)
- 1/4 cup chopped fresh parsley
- Grated Parmesan

Preparation
Step 1
1. Cook pasta according to package directions. Drain and set aside.
2. Brown sausage over medium high heat for 4-5 minutes.
3. Add onion and cook for 5 more minutes.
4. Add tomato paste and cook, stirring frequently, for 1 minute.
5. Deglaze pan with wine and increase heat to high and cook until liquid is nearly evaporated.
6. Add tomatoes and simmer until thickened 5-6 minutes.
7. Stir in parsley.
8. Serve over pasta with Parmesan garnish.
