Ingredients
- 2-3 coarsely chopped green onions
- 1/2 cup milk
- 5-6 oz. Roquefort cheese
- 1/3 cup cream
- 2 eggs
- salt, pepper and nutmeg to taste

Preparation
Step 1
Preheat oven to 350°. Coarsely chop 2-3 green onions, including some of the tops. Combine with 1/2 cup milk in a saucepan and bring to a boil; set
aside. Crumble 5-6 oz. Roquefort cheese in a bowl and lightly mash with a fork. Add 1/3 cup cream and
stir gently. In a separate bowl beat 2 eggs and stir in the hot milk and onions. Combine the egg mixture
with the cheese, add a pinch of salt and freshly ground pepper and nutmeg and stir- do not over mix. Fill 4-6 ramekins (depending on the size) and
place them in a baking pan with enough boiling water to com 2/3 of the way up the ramekins. Bake for 25-30 min. until custard is set. Serves 6.
