Ingredients
- 1 C sugar
- 2/3 C salad oil
- 1 1/2 C sifted flour
- 2 tsp baking powder
- 2 eggs
- 1/2 tsp soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 C grated carrots
- 1/2 C chopped nuts

Preparation
Step 1
Preheat oven to 350*. Mix sugar and oil to a smooth, heavy mixture. Add sifted ingredients and blend in carrots. Add eggs one at a time, beating well after each. Add nuts and blend well. Turn into greased floured cake pans. Bake 55-60 minutes. Cover cake with aluminum foil first 20 minutes of baking. Let cool 10 minutes.
