Ingredients
- 1 1/2 cups Flour
- 1 1/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp ground Cinnamon
- 1/8 tsp salt
- 2 slightly beaten Egg Whtes
- 1 cup Mashed Banana
- 1/4 cup Brown Sugar
- 1/4 cup cooking Oil
- Nonstick Spray coating

Preparation
Step 1
In a medium bowl stir together flour, baking powder, baking soda, cinnamon and salt.
In a large mixing bowl stir together egg whites, banana, sugar and oil. Stir flour mixture into banana mixture just until moistened.
Spray an 8x4x2inch loaf pan with nonstick spray coating. Spread batter into prepared pan. Bake in a 350 oven for @50 minutes.
Cool bread in the pan for 10 minutes. Remove from pan and cool thoroughly on wire rack. For easier slicing wrap bread in plastic wrap and store overnight. Makes 1 loaf.
