Ingredients
- RIND OF ONE LEMON, ZESTED
- 2 TBSP SESAME SEEDS 1 TBSP PEELED MINCED GINGERROOT
- 1/2 CUP (1 STICK) BUTTER
- 3 TBSP FRESH LEMON JUICE
- 1 TSP SESAME OIL
- 1 TSP DIJON MUSTARD
- 1/2 TSP SOY SAUCE
- 1/2 TSP CAYENNE PEPPER
- 1 LB FILLETS – BLUE FISH, FLOUNDER, TILAPIA
- 4 SCALLIONS, SLICED THIN ON THE DIAGONAL

Step 1
TOAST SESAME SEEDS UNTI GOLDEN BROWN.
IN A SKILLET, COOK GINGER IN 2 TBSP BUTTER STIRRING UNTIL GOLDEN.
ADD REMAINING BUTTER (CUT INTO BITS) AND LEMON JUICE, STIRRING UNTIL BUTTER MELTS.
STIR IN SESAME OIL, MUSTARD, SOY SAUCE, CAYENNE, S&P. REMOVE FROM HEAT.
PAT FISH DRY AND ARRANGE SKIN SIDE DOWN IN A BUTTERED BAKING DISH IN ONE LAYER.
POUR SAUCE, SPRINKLE LEMON ZEST AND SCALLIONS ON TOP.
BAKE, COVERED IN 425 OVEN FOR 8-10 MINUTES.
REMOVE FROM OVEN, SPRINKLE WITH SESAME SEEDS. (SERVE OVER RICE.)
