HORSERADISH MASHED POTATOES

  • 2 pounds Yukon.Geld potatoes peeled
  • and chopped
  • 1 1/2 cups heavy crearn
  • 2 tablespoons butter
  • 2 t9blespoons prepared horseradish,
  • or more to taste
  • Salt and freshly ground white Pepper

Step 1

Bring a large, heavy bottomed saucepan of salted water to a boil over high heat. Add the potatoes, turn down the heat to medium and simmer for about 10 minutes or until tender, Drain the potatoes in a colander and let sit for several minutes, so the steam can evaporate; this will :keep the potatoes from tasting watery. While the potatoes are draining, place the heavy cream and butter in a small sauce pan and bring just to a simmer. Transfer the potatoes to a mixing bowl, and mash with a hand masher or-fork: Add the cream mixture, horseradish, salt and pepper. Using an. electric whisk or handheld wire whisk vigorously whip the potatoes until the ingredients are completely incorporated and the potatoes are fluffy. Cover the potatoes and keep warm until ready to serve.
