Ingredients
- 1/3 cup vegetable oil
- 2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- Salt and pepper to taste
- 18 slices (about 3/4 lb.) prosciutto
- 1 log (5 oz.) goat cheese
- 36 6" stalks asparagus (about 2 lb.) blanched

Preparation
Step 1
Whisk together oil, vinegar and mustard. Season with salt and pepper. Slice prosciutto in half lengthwise; spread each slice with goat cheese and roll around asparagus. Drizzle with dressing.
