Ingredients

  • 1/3 cup vegetable oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 18 slices (about 3/4 lb.) prosciutto
  • 1 log (5 oz.) goat cheese
  • 36 6" stalks asparagus (about 2 lb.) blanched

Step 1

Whisk together oil, vinegar and mustard. Season with salt and pepper. Slice prosciutto in half lengthwise; spread each slice with goat cheese and roll around asparagus. Drizzle with dressing.
