S’more Granola Bars
S'more granola bars are easy to make and oh, so, delicious! If you love s'mores, these are a perfect snack, filled with chocolate and mini marshmallows.
- 3 1/2 cups old-fashioned oats (not instant or quick)
- 1 cup whole wheat flour
- 1 cup crushed graham crackers
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1 Tablespoon ground flax
- 1/3 cup packed brown sugar
- 1 teaspoon vanilla
- 2/3 cup butter, melted
- 1/2 cup agave syrup (you can also use honey)
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup mini-marshmallows

Preheat oven to 325°F. Prepare 9 x 13 pan using foil sling method. Make a foil sling by lining a 9 x 13-inch baking pan with foil so that the extra foil is hanging over the edges of the pan. Coat lightly with baking spray.
Mix oats, crushed graham crackers, wheat flour, baking powder, cinnamon, flax and brown sugar in a large bowl. In a smaller bowl, mix vanilla, melted butter, and agave syrup. Add to dry ingredients and combine using wooden spoon. Add chocolate chips and marshmallows and mix again.
Press firmly into prepared pan and bake for about 18-20 minutes. Let cool for about 20 minutes and remove using foil sling. Cut into bars and continue to cool. Once completely cool, wrap bars individually in plastic wrap. I like to store them in the refrigerator but they can also be stored at room temperature in an airtight container.
