Ingredients
- 1 large sweet onion, diced
- 2 ears of corn, cut off the cob
- 2 1/2 teas. divided
- 1 C. halved small cherry tomatoes (quartered if larger)
- 1/4 C. slivered basil leaves, plus sprigs
- 2 T. fresh lemon juice, plus lemon wedges
- 1 About 1 teas. kosher salt
- 1/2 About 1/2 teas. black pepper

Step 1
Saute onion and corn in 2 T. olive oil until they start to brown. Mix onion, corn, tomatoes, slivered basil, lemon juice, 1 yes. salt, and 1/2 teas. pepper in a bowl.
Mound over grilled salmon.
