Ingredients

  • 2 8" Sub Rolls
  • 2 × 6 oz Chicken Breasts
  • 4 oz Fresh Mozzarella Cheese
  • 4 oz Bacon
  • 2 oz Pepperoni
  • 1/2 cup Marinara Sauce
  • 1-2 Tbsp Grated Parmesan Cheese
  • 1-2 tsp Granulated Garlic
  • Salt & Pepper, to taste
  • Olive Oil

Step 1

In a bowl add 1-2 tbsp of olive oil, 1 tsp of granulated garlic, salt and pepper to taste. Coat the chicken with the oil mixture. Once grill is hot, grill the chicken. While chicken is cooking, cook the pepperoni and bacon in a skillet until crispy. Drain on a paper towel. Slice two sub rolls and cover with mozzarella cheese. Sprinkle the cheese with granulated garlic and broil until the cheese has melted and the roll is toasted. In a microwave safe bowl, heat the marinara sauce. Once warmed, add the Parmesan cheese.

Spread the marinara mixture onto each side of the sub roll, slice the grilled chicken and place on the bottom side of the roll, followed by the bacon and pepperoni. Close the sandwich and serve.

HELPFUL TIPS:
The great thing about this sandwich is that everything can easily be cooked ahead of time and assembled for a quick weeknight meal. Most kids love pepperoni, bacon and pizza. This a great way to keep them happy and get chicken in them without it being fried.
