boneless, skinless, chicken breast halves
fresh basil leaves
tomatoes sliced ¼ inch thick
slices fresh mozzarella cheese
bottle of your favorite Italian salad dressing
salt and pepper to taste
toothpicks for secureing
Butterfly chicken breasts: Cut breasts in half horizontally, stop about 1/2 inch before reaching the opposite side. Place breasts in a dish for marinating. Pour 1/2 of the bottle of salad dressing over chicken and marinate for 30 minutes to 1 hour. Heat grill to medium heat. open up chicken breast and stack sliced tomato, cheese, and basil on bottom half of each breast. Fold over other half of chicken breast and secure with a toothpick. Grill chicken, turning once, until golden brown on both sides and no longer pink in the center. About 15 minutes.
