Ingredients

  • 1/4 c drained and chopped sun dried tomatoes in olive oil
  • 1/2 red pepper, chopped
  • 1 tsp freshly grated lemon peel
  • 2 tsp chopped fresh thyme leaves
  • 1/4 tsp pepper
  • 4 cod fillets (6 oz ea)
  • 1/8 tsp salt
  • 2 tbsp fresh lemon juice

Preparation

Step 1

Mix first 5 ingredients. Preheat oven to 450. Spray 13 x 9 dish with cooking spray. Place cod in prepared dish. Sprinkle with 1/8 tsp salt, top with tomato mixture. Drizzle with lemon juice. Bake 12-14 minutes until fillets are opaaque in centre.
