Ingredients

  • 3

    medium onion - chopped

  • 2

    mediam bell pepper - chopped

  • 6

    celery stalks - chopped

  • 2

    cloves garlic - chopped

  • 2

    sticks butter

  • 3

    lbs. crawfish/shrimp boiled & chopped

  • ½

    cup green onion - chopped

  • 1

    cup parsley - chopped

  • ¼

    teaspoon cayenne pepper

  • 2

    cans Cream of Shrimp Soup

  • 1

    cup of Cream of Mushroom Soup

Directions

Saute onion, pepper, celery, and garlic in butter until tender. Add soup, and bring to a boil, reduce heat and cover. Simmer for 45 minutes, stirring often (it burns easy). Add crawfish, green onion and parsely. Continue to simmer 20 minutes. Serve over rice.
