Roasted Fennel with Tomatoes

  • 2 Fennel bulbs
  • 1 garlic bulb
  • 1 pint tomates
  • 1 lemon
  • 3 Tbsp EVOO
  • t tsp salt
  • 1 tsp sugar

Step 1

Core and thinly slice fennel, chop some of the fronds. Peel cloves from garlic and toss with fennel and fronds. Quarter a lemon, add to fennel. Add EVOO and salt and sugar to vegetables and place on a baking sheet. Roast in 500 degree oven until golden, about 20 minutes. Toss in tomatoes and roast until tomatoes burst, about 7 more minutes.
