Ingredients

  • 4 skinned fillets of firm white fish
  • 3 tablespoon olive oil
  • A squeeze of lemon juice and salt to taste
  • Sprinkling of dried dill leaves
  • 1 teaspoon crushed garlic
  • 250 g fresh green beans, cut into 3cm pieces
  • 2 carrots, cut at an angle, into 0.5cm slices
  • 2 zuchinni, , cut at an angle, into 0.5cm slices
  • 250 g bean sprouts
  • Salt and pepper to taste

Preparation

Step 1

Marinate fish in lemon juice and salt, and pan grill in 1 tablespoon of olive oil until cooked through. Remove from pan and leave aside.
In the same pan, add remaining olive oil, and garlic. Fry for a few minutes.
Add beans and carrot and stir fry for a few minutes.
Add zuchinni and bean sprouts and fry until all vegetable are cooked, but firm to the bite.
Add salt and pepper to taste.
Arrange vegetables on a plate, and place fish on top. Serve hot
