Ingredients

    package (2 sheets) frozen puff pastry

  • 10

    oz. frozen chopped spinach - thawed and drained WELL.

  • 8

    oz. Blue Heron Farm Greek chevre

  • 8

    oz. ricotta cheese - or just more chevre….I like a lot of cheese

  • 3-4

    chopped green onions - both green and white parts

Directions

At least partially thaw the puff pastry before you get started. Preheat oven to temperature indicated on puff pastry package. Lay one sheet of pastry on a cookie sheet. Combine the rest of the ingredients in a bowl. Spread the mixture evenly across the sheet of pastry. Top with second sheet - bake until golden brown and puffy. You can get fancy and seal/crimp the edges of the pastry with a fork - but I just throw it in, as-is-- with the filling running edge to edge. I'm that kind of cook. Serves 6.
