Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 1 Tbsp. + 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup low-fat buttermilk
  • 2 eggs
  • 1/4 cup canola oil

Preparation

Step 1

Preheat oven to 350 degrees F. Spray 8x8” pan with nonstick spray.
In large bowl, mix all dry ingredients.
In separate bowl, combine buttermilk, eggs, canola oil, and beat 2 minutes.
Add wet ingredients into dry ingredients.
Pour batter into pan and bake 20-25 minutes.
Cool for 10 minutes, then invert on rack.
Cut into squares and serve
