Chocolate Coconut Bars

Ingredients

  • 2 cups sweetened coconut
  • 3/4 cup sweetened condensed milk
  • 1/4 tsp cinnamon
  • 24 almonds, lightly toasted
  • 8 oz dark chocolate 50% extra dark
  • 2 tbsp vegetable oil
  • 1/2 tsp Kosher Salt or Maldon Sea Salt

Step 1

Mix first 3 ingredients and form into 12 small rectangles placing on parchment paper. If too sticky chill until able to mold. Gently press two almonds on the top of each bar. Freeze for 3 hours. Melt chocolate and oil in microwave for 30 seconds. Dip bars in melted chocolate. Replace on cookie sheet and sprinkle with salt. Put in fridge until hard...chocolate melts fast so serve with a fork.
Alternative treat is to wrap bacon on a steel rod in a ring shape. Bake until crispy...cool and fill hole with caramel. Dip in chocolate and when cool sprinkle with salt. Bacon chocolate.
