Recipe is from a family friend who used to own a bakery. Absolutely the best carrot cake ever. Requested for everyones birthdays.

Ingredients
- Cake:
- 1 1/4 c corn oil
- 2 c sugar
- 2 c flour
- 2 tsp cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 4 eggs
- 4 c grated carrots
- 1/2 c drained, crushed pineapple
- 1 c chopped pecans (optional)
- 1 c raisins soaked in hot water to soften
- Frosting:
- 8 oz unsalted butter
- 8 oz cream cheese
- 1 lb of powdered sugar
- 1 tsp vanilla

Preparation
Step 1
Preheat oven to 350F and grease a 10 in tubepan. If desired you can grease 2 9 in pans and cook for only 25-30 mins if desired.
Soak raisins in boiling water while you make the batter.
Combine all ingredients except the carrots, raisins, and nuts in a mixer and blend well. Add carrots,raisins, raisins and nuts.
Pour into pan and bake for 45 mins to an hr.
