Mussels in White Wine

Ingredients

  • 3 lbs mussels
  • 1/3 cup flour
  • 2 tablespoons unsalted butter
  • 2 tablespoon olive oil
  • 1 cup chopped shallots
  • 1 1/2 teaspoon minced garlic
  • 1/2 cup chopped plum tomatoes
  • 1/2 teaspoon saffron threads
  • 1/3 cup chopped flat leaf parsley
  • 1 tablespoon fresh thyme leaves
  • 1 cup white wine
  • 2 teaspoons salt
  • 1 teaspoon pepper

Preparation

Step 1

Clean mussels by placing them in a bowl, with 2 quarts water and flour, for 30 minutes. Remove beards and scrub if needed.

In a non aluminum stock pot heat butter and olive oil over medium heat.

Add shallots and cook for 5 minutes.

Add garlic and cook for 3 more minutes until shallots are translucent.

Add tomatoes, saffron, parsley, thyme wine, salt and pepper. Bring to a boil.

Add mussels and stir well. Cover and cook over medium heat for 8-10 minutes. Shake pot occasionally to ensure mussels do not stick.
