Blackberry Brie Omelets

Ingredients

  • 1 package (6 ounces) fresh blackberries
  • 4 large eggs
  • 3 tablespoons milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground pepper
  • 4 teaspoons butter
  • 4 ounces brie cheese, rind trimmed off and cut into cubes
  • 2 tablespoons honey (optional)

Preparation

Step 1

Cut blackberries in half crosswise and set aside.
Beat eggs, milk, salt and pepper together in a large bowl.
Heat an 8 inch non-stick skillet over medium heat. Add the butter to melt.
Pour one fourth the egg mixture into the pan.
When egg starts to bubble, push toward the center with a spatula and tilt pan to allow uncooked portion to run underneath. Continue around the edges until eggs are set.
Reduce heat to low. Place one fourth the cheese and blackberries in each omelet.
Drizzle with honey, if desired.
Fold over omelet and place on plate. Repeat for each omelet.
