Cream cheese and chives mashed potatoes

Ingredients

  • 2 lbs. Yukon Gold potatoes, peeled and cubed
  • 3 qts. water
  • 2 tsp. salt, divided
  • 8 oz. cream cheese, softened
  • 1/4 c. milk
  • 1 Tbs. chopped fresh chives
  • 1/4 tsp. ground black pepper
  • Garnish: additional chopped fresh chives

Preparation

Step 1

Cook potatoes with salt until tender.
Drain potatoes well and return to saucepan. Add cream cheese and butter.
Using a potato masher, mash potato mixture until cream cheese and butter are melted. Add milk, chives, remaining 1 tsp. salt, and pepper, stirring to combine well.
Garnish with chopped chives, if desired.
