Grilled Potatoes

  • 4 large red potatoes (about 1 1/1 lbs.)
  • 1/2 cup vegetable oil
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon hot salt, like Morton
  • 1 scallion, chopped

Step 1

1.Heat grill or broiler. In large saucepot over high heat, bring red potatoes and enough salted water to cover to a boil. Cook 3 min.; drain. Quarter potatoes.
2.In small bowl, stir together vegetable oil, chili powder and hot salt. Add partially cooked potatoes; toss to coat evenly.
3.Place potatoes on grill or broiler; cook 10 minutes, or until tender, turning frequently. Transfer to serving bowl. Sprinkle with scallions.
