- 2 large potatoes
- 1 cup boiled sweet corn kernels (makai ka dana)
- 1 tbsp butter
- 2 tbsp chopped onions
- 1/2 green chilli , finely chopped
- 2 tbsp grated processed cheese
- salt and freshly ground pepper to taste

- springs of parsley
Wash and prick the potatoes with the fork and microwave on high for 5 minutes. Remove and cool.
Slit the potatoes into 2 halves. Scoop out the centre to make a small pocket and place them in a microwave safe bowl.
In another microwave safe bowl, heat the butter on high for 30 seconds.
Add the onions, green chilli. Mix well and microwave on high for 2 minutes.
Add the corn kernels, salt and pepper and mix well.
Spoon the mixture in the potatoes, sprinkle cheese and microwave on high for 1 minute.
Serve hot garnished with sprigs of parsley.
