Lemon Bread with Glaze - Paleo

Ingredients

  • Glaze:
  • 6 eggs
  • 1/4 cup coconut oil or butter, melted
  • zest of 2 lemons
  • juice of 2 lemons, plus non-dairy milk of choice, added to juice, to equal 1 cup
  • 1/3 cup pure honey
  • 2/3 cup coconut flour
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 2 Tbsp butter, melted
  • 2 Tbsp pure honey
  • 2 Tbsp non dairy milk, coconut milk is fine too
  • zest of 1 lemon
  • juice of 1 lemon
  • 1/2 tsp vanilla

Preparation

Step 1

1. Preheat the oven to 350 degrees and grease a 9x5 loaf pan.

2. Mix all of the wet ingredients in one bowl and all of the dry ingredients in another bowl. Add the dry to the wet and mix well.

3. Pour into greased loaf pan and bake 32-45 minutes (avg 35 minutes, but check) until cooked through the middle and golden on top. Let cool before glazing.

4. Make the glaze: Mix all of the glaze ingredients in a small pot over low heat until simmering. Remove from heat and cool. Place in the refrigerator to firm up.
Once firm, pour the glaze over the bread. Refrigerate for 30-60 minutes until the glaze firms up.
