Melt-in-your-mouth Pumpkin Bread

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2- 4 oz pkgs instant coconut cream pudding mix
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/4 cups vegetable oil
  • 5 eggs
  • 2 cups canned pumpkin

Preparation

Step 1

Combine oil, eggs, and pumpkin in large bowl. Combine flour, sugar, pudding mix, baking soda, salt, & cinnamon in separate bowl. Add dry mixture to pumpkin mixture, mixing well. Spread batter into 2 greased and floured bread pans.

Bake at 325 degrees for approximately 1 hour, 20 minutes or until toothpick inserted in center comes out clean.
